• 1 T minced garlic<\/li>
• 2 stalks celery<\/li>
• 2 large carrots<\/li>
• 1 zucchini<\/li>
• 1 yellow onion<\/li>
• 1\/2 large eggplant<\/li>
• handful green beans<\/li>
• 1\/2 container mushrooms<\/li>
• 1 can diced tomatoes<\/li>
• 2.5 T tomato paste<\/li>
• 1 qt broth<\/li>
• 1 tsp rosemary<\/li>
• 1 tsp parsley<\/li>
• 1 T herbes de Provence<\/li>
• salt & pepper, to taste<\/li>
• 1 can white beans<\/li>
• 1\/2 box GF pasta (cook according to package)<\/li>
• roasted butternut squash<\/li>
• DF parm cheese, topping<\/li><\/ul><\/div>\n\n

  Instructions<\/h2>\n\n

  1. pre chop all veggies<\/li>
  2. saut\u00e9 garlic, onion, carrots, zucchini and celery in oil in a large pot for 5 min<\/li>
  3. add in eggplants, mushrooms and green beans<\/li>
  4. after a few min, add in canned tomatoes, tomato paste and broth<\/li>
  5. next add in spices and boil for 10 min<\/li>
  6. bring down to a simmer and mix in beans, pasta and diced butternut squash and cook for 10 more<\/li>
