Ingredients<\/h2>\n\n

+Acorn Squash<\/p>\n\n

+1\/2 lb Chicken Sausage<\/p>\n\n

+1\/4 yellow onion, diced<\/p>\n\n

+1\/2 zucchini, diced<\/p>\n\n

+Salt & Pepper, to taste<\/p>\n\n

+Avocado oil spray<\/p>\n\n

+Favorite Cheese- I used Trader Joe’s Cashew Mozzarella <\/p><\/div>\n\n

Instructions<\/h2>\n\n

1. Preheat oven to 400F<\/li>
2. Cut squash in half and scoop out the seeds<\/li>
3. Spray inside of the squash with oil and season with salt & pepper<\/li>
4. Roast each half with the flesh side down for ~15 min (until cooked\/slightly browned)*<\/li>
5. Meanwhile, saut\u00e9 onion and zucchini in a pan<\/li>
6. Add in chicken sausage until cooked through<\/li>
7. Once the squash is done, spoon the sausage mixture into each half of the squash<\/li>
8. Top with the cheese and place back in oven until cheese is melted (I use broil settings sometimes)<\/li><\/ol>\n\n
