To Prepare:<\/span><\/strong><\/p>\n\n

1. start by placing sweet potato slices on parchment lined baking sheet, spray with oil, sprinkle with salt and roast on 375F for 20-25 min (be careful to not let sweet potatoes get too soft or the sandwiches will be messy)<\/li>\n\n
2. cook turkey bacon slices as normal<\/li>\n\n
3. to cook eggs, scramble in a glass and cook omelette style and cut into squares once cooked<\/li><\/ol>\n\n

   To Assemble:<\/span><\/strong><\/p>\n\n

   1. take 2 sweet potato slices and put 1\/4 of the avocado half on one slice and pesto on the other<\/li>\n\n
   2. take a piece of turkey bacon, half it, and place the 2 pieces on top of the avocado<\/li>\n\n
   3. take the piece of egg and place on top of pesto side<\/li>\n\n
