Walnut Crusted Honey Mustard Chicken

Each week I try to incorporate a few new recipes in my meal prep and this was one of them. I found it on Pinterest from @paleorunningmomma and let’s just say it didn’t disappoint 🤤 I substituted the turkey cutlets for chicken breasts!

Ingredients

  • 3-4 chicken breasts, cut in half
  • Breading:
    • 2 c walnuts
    • 1/3 c unsweetened coconut shreds
    • 3/4 tsp salt
    • 1/4 tsp pepper
    • 3/4 tsp smoked paprika
  • Egg wash:
    • 1 egg
    • 1/4 c spicy brown mustard
    • 2 Tbs honey
    • 2 Tbs olive oil
    • squeeze of lemon juice
  • Honey Mustard Sauce
    • 4 parts mustard
    • 1 part honey

Instructions

  1. preheat oven at 400F
  2. start with putting all breading ingredients in a food processor or nutribullet and pulse til chopped (don’t do this too long or it will become mushy)
  3. for the egg wash, blend all ingredients in a blender/nutribullet besides the egg
  4. then, pour the mixture in a bowl with the egg and mix altogether
  5. next, pour breading mixture in a separate bowl
  6. to assemble- take each piece of chicken, dip in egg wash bowl and then in breading bowl and place on lined baking sheet
  7. bake in oven for 10 min, then flip over and bake for 8 more.
  8. make a simple honey mustard sauce for dipping
