Vegan | GF | Banana Pancakes

Ingredients

  • 1-1.5 bananas, mashed
  • 1 tsp baking powder
  • 1/2 c rolled oats
  • 2 T coconut oil
  • 1 T almond butter
  • 1 flax egg (1 T ground flaxseed, 2 T water mixed and let set for a few min)
  • 1/4 c quinoa flour (any flour you have just to absorb some of the liquid)
  • 1/3 c almond milk
  • 1 T cinnamon
  • optional:
    • chocolate chips
    • blueberries
    • @vitalproteins collagen for an extra boost of protein 

Instructions

  1. Mix together all ingredients in a bowl until smooth
  2. cook in a pan or griddle like normal pancakes

  • strawberries
  • coconut butter
  • sunflower seed butter
  • @purely_elizabeth granola
  • hemp seeds
  • maple syrup
