Valentine’s Chocolate Covered Energy Bites
Ingredients:
- 1/3 almonds
- 1/2 c cashews
- 20 dates
- 3 T coconut
- 3 T mini choc chips
- 1/4 c nut milk (add in 1 T at a time)
- 1/2 tsp almond extract
- melted chocolate chips & 1/2 T coconut oil mixed together
- Valentine’s Day sprinkles (optional)
Instructions:
- blend nuts, dates, coconut and choc chips together in a food processor
- add in nut milk 1 T at a time until mixture can stick together (may not need the whole 1/4 c)
- transfer to a small dish or 8 x 8 pan and store in freezer for 30 min
- remove, cut into bars and drizzle with chocolate
- sprinkles were a bonus to make them festive
**store in freezer for best taste**
