Thai Peanut Chicken Salad
Ingredients
Marinade:
- 1/4 c coconut aminos
- 1/3 c melted PB
- 1 T rice vinegar
- 1 tsp minced garlic
- 1/2 tsp minced ginger
- 1/2 tsp chili sesame oil (or sesame oil and some chili flakes)
Salad:
- package of butter lettuce
- 1/2 package coleslaw
- 2 large green onions, chopped
- 2 large chicken breasts
- sesame seeds for topping
Dressing:
- 1/4 c coconut aminos
- 1/4 c rice vinegar
- 3 T peanut butter
- 1.5 T sesame oil
- 3 T olive oil
- 1 tsp minced garlic
- 1 tsp sriracha
Instructions
- marinade meat for at least 30 min and sauté in a pan til cooked through
- blend together in a blender to make dressing
- make salad by combining lettuce, slaw, green onion, cooked chicken, sesame seeds and dressing
