Thai Inspired | Lettuce Wraps

Ingredients

  • 1/2 yellow onion, diced
  • 8 oz mushrooms, chopped
  • 2 cloves of garlic, chopped
  • 1 lb ground chicken or turkey
  • 2 big carrots, diced
  • small can of water chestnuts, diced

Sauce:

  • 1/4 c coconut aminos
  • 1 1/2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 2 T green onion, chopped

Marinade:

  • 2 tsp sesame oil
  • 1 tsp rice wine vinegar
  • 1 T almond butter
  • 2 tsp grated ginger root
  • dash of S&P

Instructions

  1. mix marinade ingredients in small bowl and set aside
  2. do the same with sauce ingredients
  3. sauté onions, mushrooms and garlic in olive oil until onions are translucent
  4. add in ground meat and cook til meat is cooked through
  5. mix in marinade, carrots and water chestnuts and let simmer for a couple minutes
  6. spoon mixture on Bibb or whole romaine lettuce leaves and pour sauce on top for extra flavor
