Chicken Marsala

Ingredients

Chicken:

  • 2 large chicken breasts, cut into thirds
  • 1/2 c GF flour
  • salt
  • pepper
  • garlic powder
  • avocado oil + butter, for frying

Sauce:

  • 8 oz mushrooms, sliced
  • yellow onion, diced
  • 1 shallot, diced
  • 1 T minced garlic
  • 3/4 c chicken broth
  • 1/2 c Marsala wine
  • 1/2 c coconut cream
  • 2 T fresh chopped parsley
  • 1 T fresh thyme

Instructions

  1. pound chicken breast to make thinner
  2. cut into thirds and place in ziploc bag with flour and seasoning
  3. shake until covered in mixture
  4. melt butter and heat oil in a pan, place chicken in pan- cook on each side for ~5 min
  5. take off pan and set aside
  6. to make sauce, use leftover oil/butter and sauté shallot, onion and garlic
  7. after a few minutes add in mushrooms
  8. then add in broth, wine and coconut milk…stir
  9. mix in herbs and let simmer for 5 min
  10. add chicken back to pan and simmer another 5-10 min
  11. serve over rice
