Roasted Carrots w/ Goat Cheese & Candied Walnuts

This is one of the sides I made for Thanksgiving this year! Found this recipe from @inspiredbycharm and these are some of the best carrots I’ve ever had 🤤

Ingredients

Carrots:

  • 2 lbs carrots
  • 1/3 c brown sugar
  • salt and pepper to taste
  • 1/2 tsp cinnamon
  • 4 oz goat cheese crumbles
  • 1 T fresh thyme

Candied Pecans:

  • 2 T butter
  • 3 T maple syrup
  • 1 T brown sugar
  • 1 c pecan pieces
  • 1/2 tsp sea salt

Instructions

  1. place carrots in baking dish and sprinkle brown sugar, cinnamon, salt and pepper
  2. place slices of butter over entire dish
  3. roast on 375F for 30 min or until carrots are cooked through
  4. remove from oven and top with goat cheese, thyme, and candied pecans to serve

Candied Pecans

  1. melt butter, brown sugar, and maple syrup in a pan on stove
  2. add in pecan pieces
  3. simmer mixture until it thickens
  4. sprinkle in sea salt
