Roasted Carrots w/ Goat Cheese & Candied Walnuts
This is one of the sides I made for Thanksgiving this year! Found this recipe from @inspiredbycharm and these are some of the best carrots I’ve ever had 🤤
Ingredients
Carrots:
- 2 lbs carrots
- 1/3 c brown sugar
- salt and pepper to taste
- 1/2 tsp cinnamon
- 4 oz goat cheese crumbles
- 1 T fresh thyme
Candied Pecans:
- 2 T butter
- 3 T maple syrup
- 1 T brown sugar
- 1 c pecan pieces
- 1/2 tsp sea salt
Instructions
- place carrots in baking dish and sprinkle brown sugar, cinnamon, salt and pepper
- place slices of butter over entire dish
- roast on 375F for 30 min or until carrots are cooked through
- remove from oven and top with goat cheese, thyme, and candied pecans to serve
Candied Pecans
- melt butter, brown sugar, and maple syrup in a pan on stove
- add in pecan pieces
- simmer mixture until it thickens
- sprinkle in sea salt
