Ratatouille Dip & Air Fried Pita Chips
Ingredients
- 1 zucchini, diced
- 1 yellow squash, diced
- 1 small eggplant, diced
- 1 yellow onion, diced
- 1 T minced garlic
- 1 tomato, diced
- 1 can tomato sauce
- 2 T tomato paste
- 1 T Italian seasoning
- 2 tsp salt
- 1 tsp pepper
- fresh basil
- feta cheese (optional)
- pita bread
Instructions
- sauté all the veggies until onions are translucent
- add in garlic, tomato sauce, tomato paste, Italian seasoning, salt and pepper, some basil
- mix together and let simmer for 20 min
- serve in a bowl topped with feta and more basil
- serve with fresh pita bread that has been cut up and crisped up in the air fryer
