Stuffed Acorn Squash
Ingredients
+Acorn Squash
+1/2 lb Chicken Sausage
+1/4 yellow onion, diced
+1/2 zucchini, diced
+Salt & Pepper, to taste
+Avocado oil spray
+Favorite Cheese- I used Trader Joe’s Cashew Mozzarella
Instructions
- Preheat oven to 400F
- Cut squash in half and scoop out the seeds
- Spray inside of the squash with oil and season with salt & pepper
- Roast each half with the flesh side down for ~15 min (until cooked/slightly browned)*
- Meanwhile, sauté onion and zucchini in a pan
- Add in chicken sausage until cooked through
- Once the squash is done, spoon the sausage mixture into each half of the squash
- Top with the cheese and place back in oven until cheese is melted (I use broil settings sometimes)
