St. Patty’s Day Cupcakes

Ingredients:

  • 1 1/4 c GF flour
  • 1 c coconut sugar
  • 1/2 c almond milk
  • 1 T vinegar
  • 1 tsp baking powder
  • 2 eggs
  • 1/2 c coconut oil
  • 1/4 tsp salt
  • 1 tsp almond extract
  • green food coloring

Icing:

  • 1/2 T @kerrygoldusa butter
  • 2 c powdered sugar
  • 2 T almond milk
  • 1 tsp almond extract
  • green food coloring

Instructions:

  1. first, start by making your “buttermilk” by mixing almond milk and vinegar together in a bowl
  2. then, mix together sugar, eggs, coconut oil with a mixer
  3. add in buttermilk
  4. next, add in flour, baking powder, and salt, mix well
  5. lastly, add in almond extract and food coloring
  6. preheat oven to 350F & pour batter into mini muffin tins
  7. bake for 13 min and remove from oven to cool down
  8. meanwhile, make icing by mixing together ingredients in a mixer until smooth
