St. Patty’s Day Cupcakes
Ingredients:
- 1 1/4 c GF flour
- 1 c coconut sugar
- 1/2 c almond milk
- 1 T vinegar
- 1 tsp baking powder
- 2 eggs
- 1/2 c coconut oil
- 1/4 tsp salt
- 1 tsp almond extract
- green food coloring
Icing:
- 1/2 T @kerrygoldusa butter
- 2 c powdered sugar
- 2 T almond milk
- 1 tsp almond extract
- green food coloring
Instructions:
- first, start by making your “buttermilk” by mixing almond milk and vinegar together in a bowl
- then, mix together sugar, eggs, coconut oil with a mixer
- add in buttermilk
- next, add in flour, baking powder, and salt, mix well
- lastly, add in almond extract and food coloring
- preheat oven to 350F & pour batter into mini muffin tins
- bake for 13 min and remove from oven to cool down
- meanwhile, make icing by mixing together ingredients in a mixer until smooth
