Pumpkin Coffee Cake Bites

Ingredients

Coffee Cake:

• 6 T kerrygold butter
• 3/4 c coconut sugar
• 2 eggs
• 1 c GF flour
• 1 tsp baking powder
• 1 tsp pumpkin spice
• 1 c pumpkin purée

Streusel:

• 2 T coconut sugar
• 1/4 c GF flour
• 1.5 T cold butter
• 1/2 tsp pumpkin spice

Instructions

1. start by mixing together streusel topping by mashing butter with a fork and working the flour/sugar in until a crumble is formed
2. next mix all muffin ingredients together in a bowl
3. pour into a line muffin tin and fill each cup 2/3 of the way
4. sprinkle streusel mixture on top of each muffin
5. bake @350F for 30 min
