Pan Seared Japanese Eggplant

Ingredients

  • Japanese eggplant
  • sea salt
  • 3 T coconut aminos
  • pepper
  • fresh basil

Instructions

  1. first, chop up eggplant into chunks
  2. cover in salt and let sit for 20-30 min
  3. then, add it remaining ingredients and combine
  4. transfer to a pan on the stove at medium heat and sauté for ~10 min
