Pan Seared Japanese Eggplant

Ingredients
- Japanese eggplant
- sea salt
- 3 T coconut aminos
- pepper
- fresh basil
Instructions
- first, chop up eggplant into chunks
- cover in salt and let sit for 20-30 min
- then, add it remaining ingredients and combine
- transfer to a pan on the stove at medium heat and sauté for ~10 min
