One Pan Meal: Tuscan Chicken
Ingredients
- 4 chicken thighs
- 1/2 jar sun dried tomatoes
- 1/2 onion, diced
- 1-2 T olive oil
- fresh oregano sprigs
- fresh cilantro (optional)
- 2 T minced garlic
- 1-2 c orzo pasta, pre cooked
- 1 can coconut milk
- salt and pepper to taste
Instructions
- in a cast iron skillet, heat olive oil
- add in onion, sun-dried tomatoes, minced garlic, salt & pepper, and chicken thighs
- mix around pan to help season chicken
- let chicken thighs sear for 5 min and then flip over and cook another 5 min on medium heat
- add in coconut milk, oregano and cilantro to pan and mix around
- next, put skillet in oven and cook @400F for 8 min to finish cooking chicken through
- remove from oven, place skillet back on burner and turn heat to low
- mix in orzo pasta and let simmer for a few min for serving
