One Pan Meal: Tuscan Chicken

Ingredients

  • 4 chicken thighs
  • 1/2 jar sun dried tomatoes
  • 1/2 onion, diced
  • 1-2 T olive oil
  • fresh oregano sprigs
  • fresh cilantro (optional)
  • 2 T minced garlic
  • 1-2 c orzo pasta, pre cooked
  • 1 can coconut milk
  • salt and pepper to taste

Instructions

  1. in a cast iron skillet, heat olive oil
  2. add in onion, sun-dried tomatoes, minced garlic, salt & pepper, and chicken thighs
  3. mix around pan to help season chicken
  4. let chicken thighs sear for 5 min and then flip over and cook another 5 min on medium heat
  5. add in coconut milk, oregano and cilantro to pan and mix around
  6. next, put skillet in oven and cook @400F for 8 min to finish cooking chicken through
  7. remove from oven, place skillet back on burner and turn heat to low
  8. mix in orzo pasta and let simmer for a few min for serving
