Goat Cheese Stuffed Turkey Meatballs
Ingredients:
Turkey Meatballs:
- 1 lb ground turkey
- 2 T fresh cilantro and parsley (or 2 tsp dried parsley)
- 1/4 c red onion, diced
- 1 egg
- 2 T GF flour
- 1 tsp minced garlic
- 1/2 tsp onion powder
- 1 tsp smoked paprika
- salt and pepper to taste
- 1 oz goat cheese
Sauce:
- 1 can full fat coconut milk
- 2 T tomato paste
- 1 T parsley/cilantro combo
- 1/4 red onion, diced
- minced garlic
- salt and pepper to taste
- 1 bag @traderjoes kohlrabi veggie pasta (or your fav pasta)
Instructions:
- to make meatballs, mix all meatball ingredients besides goat cheese in a bowl
- once combined, roll mixture into 1-1.5 inch balls
- to stuff, take a small chunk of goat cheese and push into the middle of the meatball and then wrap the ground turkey around it to seal the meatball
- sauté in a pan until cooked through
- if making with the sauce, start by only searing the meatballs on one side for 3 min and then another side for 3 more min,
- remove from pan
- add kohlrabi veggie pasta, garlic and onion to pan and sauté for 6-8 min (if using normal pasta, cook separately and add in when you add the meatballs back to the sauce)
- add in coconut milk, tomato paste and salt & pepper
- add meatballs back in and let simmer for 10-12 min
- once meatballs are cooked though, you are ready to serve
