Ginger Molasses Cookies

Ingredients

  • 3/4 c butter, softened
  • 1/2 c coconut sugar
  • 1/2 c monk fruit sweetener*
  • 1/4 c molasses
  • 1 egg
  • 2 1/4 c GF flour
  • 2 tsp baking soda
  • 1/2 T ginger
  • 1 tsp cinnamon
  • 1 tsp cloves
  • more sugar for topping

*you can use normal white sugar or just use all coconut sugar if you don’t want to get another ingredient

Instructions

  1. cream together butter, sugar, molasses and egg
  2. in a separate bowl, mix together dry ingredients
  3. add dry ingredients to butter mixture
  4. place dough in fridge for 30 min (this will keep the cookies from flattening out while they bake)
  5. remove and roll dough into 1/2 inch balls and coat with sugar
  6. place on lined baking sheet and press to flatten slightly
  7. bake @350F for 10 min, remove and let cool for 5 min
  8. transfer to a cooling rack to completely cool down before enjoying!
