Ginger Molasses Cookies
Ingredients
- 3/4 c butter, softened
- 1/2 c coconut sugar
- 1/2 c monk fruit sweetener*
- 1/4 c molasses
- 1 egg
- 2 1/4 c GF flour
- 2 tsp baking soda
- 1/2 T ginger
- 1 tsp cinnamon
- 1 tsp cloves
- more sugar for topping
*you can use normal white sugar or just use all coconut sugar if you don’t want to get another ingredient
Instructions
- cream together butter, sugar, molasses and egg
- in a separate bowl, mix together dry ingredients
- add dry ingredients to butter mixture
- place dough in fridge for 30 min (this will keep the cookies from flattening out while they bake)
- remove and roll dough into 1/2 inch balls and coat with sugar
- place on lined baking sheet and press to flatten slightly
- bake @350F for 10 min, remove and let cool for 5 min
- transfer to a cooling rack to completely cool down before enjoying!
