GF/DF Green Bean Casserole
Ingredients
Filling:
- 1 large bag of frozen green beans
- 1 can coconut cream (of full fat coconut milk)
- 1 T onion powder
- 4 sliced of thick cut bacon
- salt and pepper, to taste
- 3 T gluten free flour
- 1/2 T arrowroot flour (thickener)
Topping:
- 1 white onion, sliced thin
- 1 T butter or oil
- 1 T GF flour
Instructions
- start by caramelizing the onions in butter or oil. keep cooking until nice and crispy
- to make filling, steam green beans in pot first
- add in coconut milk and bring to a boil
- meanwhile, cook bacon in another pan until almost crispy (keep bacon grease)
- once bacon is done, set aside and pour grease into green bean mixture
- chop bacon into bite size pieces
- add in bacon along with remaining filling ingredients, mix together and continue to simmer until mixture begins to thicken (this is when it is done)
- check back on your onions and mix in 1 T of flour to finish off
- to assemble, pour filling into a 9×13 pan and top with crispy onions
- bake @350F for 15 min to bring the flavors together before serving
