Feta Cheese Smashed Potatoes
Ingredients:
- one bag of small golden or new potatoes
- 1/3 red onion, diced
- 1-2 oz feta cheese
- olive oil
- salt
- pepper
- garlic powder
- parsley
Instructions:
- first, boil the potatoes until they are able to be pierced with a fork easily
- drain water and place potatoes on a baking sheet
- use a glass or back of a large spoon to smash each potato
- drizzle with oil and season to your preference with salt, pepper, garlic and parsley
- next, sprinkle diced red onion over the potatoes and then crumble the feta
- bake @375F for 10-15min
