DF | Pumpkin ‘Cream Cheese’ Roll Up

Ingredients

Cake:

  • 1/2 c @lakanto monkfruit sweetener (use any sugar)
  • 3/4 c GF flour
  • 1 tsp baking soda
  • 1 tsp pumpkin spice
  • 2/3 c pumpkin
  • 3 eggs

Filling:

  • 8 oz DF cream cheese (@kitehillfoods is my fav)
  • 1 T pumpkin spice
  • 1/3-1/2 c powdered sugar (depends on your level of sweetness)
  • 1 T butter

Instructions

  1. mix together dry cake ingredients
  2. mix in wet ingredients next
  3. pour batter into parchment line 8×13 pan
  4. bake for 15 min @375F
  5. remove from oven and roll up like a fruit roll up and let cool in that position
  6. meanwhile mix together all filling ingredients
  7. once cake roll is cooled, unroll, add a layer of the filling and roll back up
  8. let set in fridge for 20 min before slicing to serve
