Coconut Layered Bars

Ingredients

Layer 1:

  • 1/2 c coconut sugar
  • 1/3 c butter (I use kerrygold)
  • 1 c almond flour
  • 2 T ground flaxseed

Layer 2:

  • 2 eggs
  • 1/2 c honey
  • 2 T almond flour
  • 1 tsp baking powder
  • 1 tsp vanilla
  • 1/2 tsp salt
  • 1 c coconut
  • 1/3 c mini choc chips (I used @enjoylifefoods)

Instructions

Layer 1:

  1. For Layer 1, cream together butter and sugar
  2. add flour and flaxseed til combined
  3. line a 9×9 pan with parchment paper and spread the mixture along the bottom to make the first layer
  4. bake @ 350F for 12 min
  5. For Layer 2, beat the eggs
  6. mix in the rest of the ingredients
  7. once layer one is done baking, pour layer 2 mixture on top
  8. bake another 20 min or so (depends on your oven
  9. When it’s all baked and cooled down, cut into squares and drizzle with melted chocolate 🍫
