Chicken & Broccoli Stir Fry

Ingredients

  • 3 chicken breast, sliced thin
  • 2 heads of broccoli, steamed
  • 4 cloves garlic, chopped
  • 1 package of sliced mushrooms
  • 1/2 inch piece of ginger, sliced thin
  • 2 green onions, chopped
  • cooking oil
  • 3 T coconut aminos
  • 2 tsp garlic powder
  • @lotusfoods pad Thai rice noodles

Sauce:

  • 2 T chicken broth
  • 1/2 tsp salt
  • 1 tsp sesame oil
  • 3 T coconut aminos
  • 1/2 tsp balsamic vinegar

Instructions

  1. first sauté garlic, ginger and green onions in cooking oil for 1 min
  2. add in chicken, garlic powder and coconut aminos
  3. cook chicken almost all the way through, then add broccoli, green onions and mushrooms
  4. meanwhile, mix all sauce ingredients in a small bowl
  5. also cook noodles according to package
  6. once chicken and veggies are cooked, add in sauce and noodles and sauté for about 4 more min
