Ingredients:

• 2-3 zucchini
• oil spray
• salt and garlic powder
• pizza sauce
• fav cheese (I use TJ’s dairy free cashew)
• pepperoni/ other toppings you like

Instructions:

1. cut a zucchini in 3-4 sections depending on the size
2. the cut each section in half long ways
3. spray with oil, season with salt and garlic and roast for 10ish min at 400F to get semi soft
4. remove from over and spread pizza sauce on the flat side of each zucchini chunk
5. add cheese and pepperoni on top
6. place back in oven until cheese is melted, then you’re ready to serve!
