Braised Beef w/ Lots of Onions
#toogoodTuesday ft. Six Seasons cookbook’s recipe
Ingredients:
- 2-3 lb boneless beef chuck roast, cut into 2 or 3 large pieces
- sea salt
- pepper
- 2 T olive oil
- 2 T butter
- 2 large onions, thinly sliced
- 2 T minced garlic, or 6 cloves smashed and peeled
- 1 small handful of thyme sprigs
- 1 c dry white wine
Instructions:
- set meat out on a plate, season with salt and pepper and let set for 1 hour so it gets to room temp
- preheat oven to 300F
- in a Dutch oven or oven safe pot, heat oil over medium high heat
- add in pieces of meat and brown it on both sides (6 min each side
- next, remove meat from pan temporarily and add in butter, onions, thyme and garlic- mix together
- add meat back in on top of this mixture and sauté for 10 min to help cook the onions
- then, pour in wine and cover with the lid
- cook for about 2 hours in the oven or until nice and tender
- serve cut in slices and topped with onions
