Balsamic Stuffed Chicken
Ingredients
- 3-4 thin chicken breasts or filets
- handful of cherry tomatoes, quartered 🍅
- handful of spinach, chopped
- 1 T balsamic vinegar
- 1/4 c goat cheese
- Italian seasoning
- salt and pepper
- toothpicks
Marinade (optional):
- 1/3 c balsamic vinegar
- 2 T olive oil
- 1 tsp italian seasoning
- salt and pepper, to taste
Instructions
- marinade chicken at least an hour before you plan to cook it
- in a bowl, combine tomatoes, spinach, goat cheese, balsamic and seasoning in a bowl and mix
- lay each chicken breast flat and scoop a spoonful of the filling on one half of the chicken
- fold over the other half (hamburger style if you remember from elementary school😉) on top and place 2-3 toothpicks through the top to hold together
- cook in oven on 375F for about 10-15 min, or until chicken is cooked through (time may vary based on size of chicken breast)
