Goat Cheese Stuffed Turkey Meatballs

Ingredients:

Turkey Meatballs:

  • 1 lb ground turkey
  • 2 T fresh cilantro and parsley (or 2 tsp dried parsley)
  • 1/4 c red onion, diced
  • 1 egg
  • 2 T GF flour
  • 1 tsp minced garlic
  • 1/2 tsp onion powder
  • 1 tsp smoked paprika
  • salt and pepper to taste
  • 1 oz goat cheese

Sauce:

  • 1 can full fat coconut milk
  • 2 T tomato paste
  • 1 T parsley/cilantro combo
  • 1/4 red onion, diced
  • minced garlic
  • salt and pepper to taste
  • 1 bag @traderjoes kohlrabi veggie pasta (or your fav pasta)

Instructions:

  1. to make meatballs, mix all meatball ingredients besides goat cheese in a bowl
  2. once combined, roll mixture into 1-1.5 inch balls
  3. to stuff, take a small chunk of goat cheese and push into the middle of the meatball and then wrap the ground turkey around it to seal the meatball
  4. sauté in a pan until cooked through
  5. if making with the sauce, start by only searing the meatballs on one side for 3 min and then another side for 3 more min,
  6. remove from pan
  7. add kohlrabi veggie pasta, garlic and onion to pan and sauté for 6-8 min (if using normal pasta, cook separately and add in when you add the meatballs back to the sauce)
  8. add in coconut milk, tomato paste and salt & pepper
  9. add meatballs back in and let simmer for 10-12 min
  10. once meatballs are cooked though, you are ready to serve
