Thai Peanut Chicken Salad

Ingredients

Marinade:

  • 1/4 c coconut aminos
  • 1/3 c melted PB
  • 1 T rice vinegar
  • 1 tsp minced garlic
  • 1/2 tsp minced ginger
  • 1/2 tsp chili sesame oil (or sesame oil and some chili flakes)

Salad:

  • package of butter lettuce
  • 1/2 package coleslaw
  • 2 large green onions, chopped
  • 2 large chicken breasts
  • sesame seeds for topping

Dressing:

  • 1/4 c coconut aminos
  • 1/4 c rice vinegar
  • 3 T peanut butter
  • 1.5 T sesame oil
  • 3 T olive oil
  • 1 tsp minced garlic
  • 1 tsp sriracha

Instructions

  1. marinade meat for at least 30 min and sauté in a pan til cooked through
  2. blend together in a blender to make dressing
  3. make salad by combining lettuce, slaw, green onion, cooked chicken, sesame seeds and dressing
