Apple Pie Turnovers
Ingredients:
Dough:
- 8 T cold butter
- 1.5 c GF flour
- 1/2 c oat milk
- 2 T baking powder
- 1 tsp cinnamon
- 1 T coconut sugar
Filling:
- red apple (I used honey crisp),diced
- green apple, diced
- 2 T maple syrup
- 1/2 T cinnamon
- 1 tsp lemon juice
- 1 tsp coconut oil
- 1 T coconut sugar
Topping:
- melted butter
- coconut sugar
Instructions:
- to make dough, combine all ingredients besides oat milk in a food process
- add in oat milk to and pulse a few times to get doughy texture
- next, combine apples, maple syrup, cinnamon and lemon juice in a bowl
- transfer to a pan and saute in coconut oil
- after 5 min, sprinkle in coconut sugar and saute another 10 min
- once done, take a ball of dough and roll out into a square/rectangle shape
- add a dallop of apple filling to one half and then fold the other half of the dough on top to cover the filling
- do this until dough is gone and then brush melted butter on top of each pastry and sprinkle with more sugar
- bake @ 370F for 15 min
