Coconut Layered Bars
Ingredients
Layer 1:
- 1/2 c coconut sugar
- 1/3 c butter (I use kerrygold)
- 1 c almond flour
- 2 T ground flaxseed
Layer 2:
- 2 eggs
- 1/2 c honey
- 2 T almond flour
- 1 tsp baking powder
- 1 tsp vanilla
- 1/2 tsp salt
- 1 c coconut
- 1/3 c mini choc chips (I used @enjoylifefoods)
Instructions
Layer 1:
- For Layer 1, cream together butter and sugar
- add flour and flaxseed til combined
- line a 9×9 pan with parchment paper and spread the mixture along the bottom to make the first layer
- bake @ 350F for 12 min
- For Layer 2, beat the eggs
- mix in the rest of the ingredients
- once layer one is done baking, pour layer 2 mixture on top
- bake another 20 min or so (depends on your oven
- When it’s all baked and cooled down, cut into squares and drizzle with melted chocolate 🍫
