Chocolate Covered Pumpkin Pie Bites

Ingredients

  • 2-3 c nuts (I used a combo of cashews, walnuts, and pecans)
  • 25 deglet noor dates (these are the smaller ones so if using medjool dates you can use less since they’re bigger)
  • 1 T pumpkin spice
  • 1 T pumpkin DF creamer (or any nut milk)
  • 2 T fav choc chips
  • 1 tsp coconut oil

Instructions

  1. using a food processor, blend nuts first until they look like crumbs
  2. next add in dates, pumpkin spice and creamer/milk and blend til mixed well
  3. scoop out mixture and roll into 1 inch thick balls
  4. freeze until firm
  5. melt chocolate and coconut oil together and drizzle on the pumpkin pie bites
  6. store in freezer
