Red Curry Ramen Bowl
Ingredients
- 1 T minced garlic
- bell pepper
- yellow onion
- 1/2 container mushrooms
- 1/3 c shredded carrots
- 1 T fish sauce
- 1/2 T oyster sauce (optional)
- 8 c veggie or chicken broth
- 3 T red curry paste
- 1 tsp minced ginger
- juice from 1/2 a lime
- package of ramen noodles
- 1/4 c cilantro
- 1 can coconut milk
- 1 lb frozen shrimp
Instructions
- in a large pot, sauté garlic, bell pepper, onion and mushrooms for 6-8 min
- add in carrots, fish sauce, oyster sauce and red curry paste and sauté for 5 more min
- next add in broth, ginger, and lime juice and bring to a boil
- boil for 10 min, then turn heat down to a simmer
- add in shrimp, noodles, coconut milk and cilantro
- let simmer for at least 10 min before serving
