Red Curry Ramen Bowl

Ingredients

  • 1 T minced garlic
  • bell pepper
  • yellow onion
  • 1/2 container mushrooms
  • 1/3 c shredded carrots
  • 1 T fish sauce
  • 1/2 T oyster sauce (optional)
  • 8 c veggie or chicken broth
  • 3 T red curry paste
  • 1 tsp minced ginger
  • juice from 1/2 a lime
  • package of ramen noodles
  • 1/4 c cilantro
  • 1 can coconut milk
  • 1 lb frozen shrimp

Instructions

  1. in a large pot, sauté garlic, bell pepper, onion and mushrooms for 6-8 min
  2. add in carrots, fish sauce, oyster sauce and red curry paste and sauté for 5 more min
  3. next add in broth, ginger, and lime juice and bring to a boil
  4. boil for 10 min, then turn heat down to a simmer
  5. add in shrimp, noodles, coconut milk and cilantro
  6. let simmer for at least 10 min before serving
