Pumpkin Chili
Ingredients
- 1 butternut squash, cubed and roasted
- 1 yellow squash, quartered
- 1 yellow onion, diced
- 2 T minced garlic
- 1 lb of ground turkey
- 1 tsp red pepper flakes
- 2 tsp cumin
- 2 tsp smoked paprika
- 2 tsp cinnamon
- 1 tsp salt/pepper each
- 1 c chicken broth
- 1/4 c coconut milk
- 2 c pumpkin purée
- 1 T lemon juice (juice from half a lemon)
- can of white beans
- fresh rosemary and thyme (optional)
Instructions
- melt butter or oil in a pan and add onion and yellow squash, sauté for 4 min
- add in garlic and ground turkey (cook all the way through
- add in red pepper flakes, cumin, paprika, cinnamon and S&P
- add the chicken broth and bring to a boil
- reduce heat to medium and stir in coconut milk, pumpkin purée and lemon juice
- bring to a boil, then let simmer
- while simmering add in white beans, rosemary and thyme
- continue to simmer for 20 min for best flavor, but if short on time you can serve immediately topped with butternut squash
