Pumpkin Chili

Ingredients

  • 1 butternut squash, cubed and roasted
  • 1 yellow squash, quartered
  • 1 yellow onion, diced
  • 2 T minced garlic
  • 1 lb of ground turkey
  • 1 tsp red pepper flakes
  • 2 tsp cumin
  • 2 tsp smoked paprika
  • 2 tsp cinnamon
  • 1 tsp salt/pepper each
  • 1 c chicken broth
  • 1/4 c coconut milk
  • 2 c pumpkin purée
  • 1 T lemon juice (juice from half a lemon)
  • can of white beans
  • fresh rosemary and thyme (optional)

Instructions

  1. melt butter or oil in a pan and add onion and yellow squash, sauté for 4 min
  2. add in garlic and ground turkey (cook all the way through
  3. add in red pepper flakes, cumin, paprika, cinnamon and S&P
  4. add the chicken broth and bring to a boil
  5. reduce heat to medium and stir in coconut milk, pumpkin purée and lemon juice
  6. bring to a boil, then let simmer
  7. while simmering add in white beans, rosemary and thyme
  8. continue to simmer for 20 min for best flavor, but if short on time you can serve immediately topped with butternut squash
