Air Fryer | Coconut Chicken Tenders
Ingredients
- 2-3 chicken breasts
- 1 bowl w/ 2 whisked eggs
- 1 bowl w/ 3/4 c coconut flour
- 1 bowl w/ 1/2 c shredded coconut, 1/2 c bread crumbs, salt, pepper & garlic powder
- olive oil spray
Instructions
- first slice chicken breasts into strips however thick you want
- take a slice of chicken and dip in the bowl of flour, then the bowl of eggs and then the bread crumb mixture bowl and set aside on a plate until all pieces are coated
- place in airfryer, spray with oil and cook for 10-12 minutes @380F
Stove Top/ Oven Method:
- heat up coconut oil in a pan and crisp the breading by sautéing each side for about 2 min
- once crisp, finish cooking through in the oven at 350 F for about 5-10min (depending on thickness of chicken)
