Butternut Squash Mac & Cheese
Ingredients
- 1/2 c coconut milk
- 2 T pumpkin purée
- 1 c roasted butternut squash
- 1 T minced garlic
- 3 T nutritional yeast
- 1 T sea salt
- 1 T olive oil or butter
- 1/2 tsp pepper
- favorite GF pasta
- 1/3 c of the pasta water
- DF cashew cheese for topping
Instructions
- in a sauce pan, mix all ingredients besides pasta and cheese and cook of medium heat, stirring occasionally
- wait for mixture to bubble, stir and bring down to low heat
- meanwhile, cook fav pasta according to package
- once pasta is done, remove 1/3 c of the pasta water and strain the rest
- mix this into your sauce mixture and stir
- add in pasta to sauce and make sure it is fully mixed
- transfer pasta mixture to a small baking dish and sprinkle the cheese on too
- •bake @375F for 10 min
