Spicy Salmon Rice Bowls

Ingredients

  • honey ‘soy’ salmon
  • sushi rice mixed with coconut aminos
  • edamame
  • green onion
  • cucumber
  • shredded cabbage mix
  • seaweed
  • spicy Mayo (1/4 c mayo + 1 T sriracha + salt & garlic)
  • avocado slices

Instructions

  1. cook salmon separately and rice according to package
  2. make spicy mayo and set aside
  3. assemble by adding rice, then edamame, green onion, cucumber and shredded cabbage
  4. add in salmon
  5. layer seaweed and avocado on the side
  6. top with spicy mayo
