Thai Inspired | Lettuce Wraps
Ingredients
- 1/2 yellow onion, diced
- 8 oz mushrooms, chopped
- 2 cloves of garlic, chopped
- 1 lb ground chicken or turkey
- 2 big carrots, diced
- small can of water chestnuts, diced
Sauce:
- 1/4 c coconut aminos
- 1 1/2 tsp sesame oil
- 1 tsp rice wine vinegar
- 2 T green onion, chopped
Marinade:
- 2 tsp sesame oil
- 1 tsp rice wine vinegar
- 1 T almond butter
- 2 tsp grated ginger root
- dash of S&P
Instructions
- mix marinade ingredients in small bowl and set aside
- do the same with sauce ingredients
- sauté onions, mushrooms and garlic in olive oil until onions are translucent
- add in ground meat and cook til meat is cooked through
- mix in marinade, carrots and water chestnuts and let simmer for a couple minutes
- spoon mixture on Bibb or whole romaine lettuce leaves and pour sauce on top for extra flavor
