Coconut Balsamic | Stuffed Chicken
Stuffed chicken is the easiest way to make chicken breasts taste more satisfying if you’re tired of eating it all the time! I typically just use whatever I have on hand to make the filling to keep it simple.
Ingredients
Breading:
- 1/2 c bread crumbs (I use @traderjoes rice crumbs)
- 2 T shredded coconut
- salt and pepper to taste
- 1 tsp garlic powder
Stuffing:
- grated cheese (I use Manchego)
- kale
- cherry tomatoes
- chicken breasts, cut in half and pounded flat
- balsamic vinegar for drizzle
- one egg, beaten for breading
Instructions
- First, take 1/2 a chicken breast and dip in beaten egg, then into breading mixture and lay flat on baking tray
- Then, mix stuffing ingredients in a bowl and spoon some of mixture on half of breaded chicken
- Next, fold chicken in half to cover stuffing and secure with a toothpick
- Repeat for remaining chickens
- Bake at 375F for about 10 min (make sure chicken is cooked through
- Top with balsamic vinegar, more cheese and cherry tomato
