Superfood Chocolate Peanut Butter Energy Cups

Ingredients
- 10 – 15 dates
- 1 c cashews
- 1/3 c walnuts
- 1/4 c shredded coconut
- 2 T peanut butter powder
- 1 T chia seeds
- **1-2 T water (if needed to make the ‘dough’ sticky)
Chocolate Coating:
- 1/4 c DF chocolate chips
- 1 T peanut butter powder
- 1 T coconut oil
Instructions
- First, in a food processor blend dates
- Next, add in nuts and blend again
- Then, add remaining mix in’s**
- Once blended, press chunks of the mixture into each section of a mini muffin tin
- When all the mixture is pressed in, place tin in freezer for 15 min
- While this is freezing, mix the chocolate coating ingredients in a microwave safe bowl and heat in 20 second intervals, until melted
- Lastly, remove muffin tin from freezer and drizzle melted chocolate across the tin
