Mahi Mahi Tacos

Last year we went to the Virgin Islands and had the best Mahi tacos down by the beach 😋 so we’ve tried to recreate them at home!

Ingredients

  • Mahi Mahi filet
  • 1 tsp smoked paprika
  • 1/2 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • oil or butter for cooking
  • 1/2 bag of coleslaw
  • fav tortillas (we used corn)

Sauce:

  • 1 container of cashew yogurt (use normal Greek if you can do dairy)
  • 1-2 T Sriracha (depends on spice tolerance)
  • 1 T avocado Mayo (make our sauce thicker)
  • 1 tsp salt
  • 1/2 tsp garlic powder

Instructions

  1. To cook fish, mix the spices together in a small bowl and rub on each Mahi filet
  2. melt butter/ oil in the pan and add seasoned filet
  3. cook covered in the pan for 4-5 min, flip over and cook covered another 4-5 min- fish should be cooked through
  4. To make sauce, mix sauce ingredients in a bowl
  5. use 1/2 -3/4 of the sauce to mix in with the 1/2 bag of coleslaw- set aside
  6. leave the remaining sauce to top your tacos
  7. To assemble tacos, take a tortilla and spoon some of the coleslaw mixture
  8. add some of the Mahi by breaking apart into large chunks
  9. drizzle with remaining sauce
