One Pot Chicken Tortilla Soup

Makes 10-12 servings

Ingredients:

  • 1 onion, diced
  • 2 zucchini, diced
  • 2 T minced garlic
  • 1 T olive oil
  • 1 lb pre cooked chicken, chopped up
  • 2 cans black beans
  • 2 can whole corn kernels
  • 2 20oz cans crushed tomatoes
  • 2 32 oz containers of chicken broth
  • 1 T cumin
  • 1 tsp cayenne pepper
  • 1 T salt
  • 1 tsp onion powder
  • 1 T smoked paprika

Topping Ideas:

  • avocado chunks
  • tortilla chips, crumbled
  • shredded cheese
  • cilantro
  • jalapeño slices
  • lime slices

Instructions:

  1. start by sautéing onion,zucchini and garlic in olive oil
  2. after 5 min, add in remaining ingredients besides chicken broth and stir to combine
  3. if you don’t have a giant pot, this might be where you need to half the mixture into 2 separate pots so it doesn’t overflow
  4. next, add in chicken broth (if you split in half, put one container of broth in one pot and another in the other pot)
  5. let soup come to a boil then simmer for 15 min before serving and adding toppings
