Valentine’s Chocolate Covered Energy Bites

Ingredients:

  • 1/3 almonds
  • 1/2 c cashews
  • 20 dates
  • 3 T coconut
  • 3 T mini choc chips
  • 1/4 c nut milk (add in 1 T at a time)
  • 1/2 tsp almond extract
  • melted chocolate chips & 1/2 T coconut oil mixed together
  • Valentine’s Day sprinkles (optional)

Instructions:

  1. blend nuts, dates, coconut and choc chips together in a food processor
  2. add in nut milk 1 T at a time until mixture can stick together (may not need the whole 1/4 c)
  3. transfer to a small dish or 8 x 8 pan and store in freezer for 30 min
  4. remove, cut into bars and drizzle with chocolate
  5. sprinkles were a bonus to make them festive

**store in freezer for best taste**
