Oven Baked Sushi Casserole

Ingredients:

Salmon Mixture:

  • 4 salmon filets, diced
  • 1/4 c coconut aminos
  • 2 green onions, chopped
  • 1/3 c lump crab meat (optional)
  • 1/4 c @primalkitchenfoods 🥑 mayo
  • 1-2 T Sriracha

Sushi Rice:

  • 2 c cooked sushi rice
  • 2 T rice vinegar

Toppings:

  • cucumber
  • avocado
  • eel sauce
  • spicy Mayo (3 T mayo + 2 tsp sriracha)
  • green onion
  • seaweed sheets

Instructions:

  1. mix salmon mixture together in a bowl
  2. cook sushi rice according to package
  3. once rice is cooked, add in rice vinegar
  4. then, layer rice in the bottom of a 9 x 13 (thinner chunks) or 8×8 (thicker chunks) pan
  5. next layer salmon mixture on top
  6. bake @400F for 12-15 min
  7. once done, remove from oven and met cook a few minutes before layering the toppings on
  8. when ready to eat, serve with pieces of seaweed to make little sushi bites or eat with a fork!
