Thai Shrimp Soup

Ingredients:

  • 1 yellow onion, chopped
  • 3 tsp minced garlic
  • 1 T minced ginger
  • 2 T red curry paste
  • 2 tsp curry powder
  • 1 tsp turmeric
  • 1 carton of broth
  • 1 cup full-fat coconut milk
  • 3 T coconut aminos
  • juice from 1/2 a lime
  • 1 package of pad Thai rice noodles
  • 1 package of frozen stir fry veggies
  • 1 lb mini pre cooked frozen shrimp
  • 2 tsp red pepper flakes (optional)
  • cilantro to garnish (optional)

Instructions:

  1. sauté onion until translucent
  2. add in garlic & ginger and sauté another minute
  3. add in ingredients from curry paste to lime juice
  4. let come to a boil then reduce to simmer for 15 in
  5. cook noodles separately according to package
  6. add in frozen shrimp and stir fry veggies and simmer another 5 min
  7. add in cooked noodles and red pepper flakes
  8. serve and top with cilantro
