Apple Pie Turnovers

Ingredients:

Dough:

  • 8 T cold butter
  • 1.5 c GF flour
  • 1/2 c oat milk
  • 2 T baking powder
  • 1 tsp cinnamon
  • 1 T coconut sugar

Filling:

  • red apple (I used honey crisp),diced
  • green apple, diced
  • 2 T maple syrup
  • 1/2 T cinnamon
  • 1 tsp lemon juice
  • 1 tsp coconut oil
  • 1 T coconut sugar

Topping:

  • melted butter
  • coconut sugar

Instructions:

  1. to make dough, combine all ingredients besides oat milk in a food process
  2. add in oat milk to and pulse a few times to get doughy texture
  3. next, combine apples, maple syrup, cinnamon and lemon juice in a bowl
  4. transfer to a pan and saute in coconut oil
  5. after 5 min, sprinkle in coconut sugar and saute another 10 min
  6. once done, take a ball of dough and roll out into a square/rectangle shape
  7. add a dallop of apple filling to one half and then fold the other half of the dough on top to cover the filling
  8. do this until dough is gone and then brush melted butter on top of each pastry and sprinkle with more sugar
  9. bake @ 370F for 15 min
