GF/DF Green Bean Casserole

Ingredients

Filling:

  • 1 large bag of frozen green beans
  • 1 can coconut cream (of full fat coconut milk)
  • 1 T onion powder
  • 4 sliced of thick cut bacon
  • salt and pepper, to taste
  • 3 T gluten free flour
  • 1/2 T arrowroot flour (thickener)

Topping:

  • 1 white onion, sliced thin
  • 1 T butter or oil
  • 1 T GF flour

Instructions

  1. start by caramelizing the onions in butter or oil. keep cooking until nice and crispy
  2. to make filling, steam green beans in pot first
  3. add in coconut milk and bring to a boil
  4. meanwhile, cook bacon in another pan until almost crispy (keep bacon grease)
  5. once bacon is done, set aside and pour grease into green bean mixture
  6. chop bacon into bite size pieces
  7. add in bacon along with remaining filling ingredients, mix together and continue to simmer until mixture begins to thicken (this is when it is done)
  8. check back on your onions and mix in 1 T of flour to finish off
  9. to assemble, pour filling into a 9×13 pan and top with crispy onions
  10. bake @350F for 15 min to bring the flavors together before serving
