One Pot Chicken Tortilla Soup
Makes 10-12 servings
Ingredients:
- 1 onion, diced
- 2 zucchini, diced
- 2 T minced garlic
- 1 T olive oil
- 1 lb pre cooked chicken, chopped up
- 2 cans black beans
- 2 can whole corn kernels
- 2 20oz cans crushed tomatoes
- 2 32 oz containers of chicken broth
- 1 T cumin
- 1 tsp cayenne pepper
- 1 T salt
- 1 tsp onion powder
- 1 T smoked paprika
Topping Ideas:
- avocado chunks
- tortilla chips, crumbled
- shredded cheese
- cilantro
- jalapeño slices
- lime slices
Instructions:
- start by sautéing onion,zucchini and garlic in olive oil
- after 5 min, add in remaining ingredients besides chicken broth and stir to combine
- if you don’t have a giant pot, this might be where you need to half the mixture into 2 separate pots so it doesn’t overflow
- next, add in chicken broth (if you split in half, put one container of broth in one pot and another in the other pot)
- let soup come to a boil then simmer for 15 min before serving and adding toppings
