Thai Shrimp Soup
Ingredients:
- 1 yellow onion, chopped
- 3 tsp minced garlic
- 1 T minced ginger
- 2 T red curry paste
- 2 tsp curry powder
- 1 tsp turmeric
- 1 carton of broth
- 1 cup full-fat coconut milk
- 3 T coconut aminos
- juice from 1/2 a lime
- 1 package of pad Thai rice noodles
- 1 package of frozen stir fry veggies
- 1 lb mini pre cooked frozen shrimp
- 2 tsp red pepper flakes (optional)
- cilantro to garnish (optional)
Instructions:
- sauté onion until translucent
- add in garlic & ginger and sauté another minute
- add in ingredients from curry paste to lime juice
- let come to a boil then reduce to simmer for 15 in
- cook noodles separately according to package
- add in frozen shrimp and stir fry veggies and simmer another 5 min
- add in cooked noodles and red pepper flakes
- serve and top with cilantro
