Chicken Marsala
Ingredients
Chicken:
- 2 large chicken breasts, cut into thirds
- 1/2 c GF flour
- salt
- pepper
- garlic powder
- avocado oil + butter, for frying
Sauce:
- 8 oz mushrooms, sliced
- yellow onion, diced
- 1 shallot, diced
- 1 T minced garlic
- 3/4 c chicken broth
- 1/2 c Marsala wine
- 1/2 c coconut cream
- 2 T fresh chopped parsley
- 1 T fresh thyme
Instructions
- pound chicken breast to make thinner
- cut into thirds and place in ziploc bag with flour and seasoning
- shake until covered in mixture
- melt butter and heat oil in a pan, place chicken in pan- cook on each side for ~5 min
- take off pan and set aside
- to make sauce, use leftover oil/butter and sauté shallot, onion and garlic
- after a few minutes add in mushrooms
- then add in broth, wine and coconut milk…stir
- mix in herbs and let simmer for 5 min
- add chicken back to pan and simmer another 5-10 min
- serve over rice
